At 1:30, after the meal and cleanup, Diana called the business meeting to order. Marsha read the minutes of last month's meeting. With the addition of one point, they were approved. She then gave the financial statement for the month, which was also approved as presented. It was approved so Marsha can pay a bill whenever it is presented to her.
Marsha then gave an update on the WAA project. Our goal of 200 wreaths has been exceeded. She explained about the ceremony, and "picking up" the wreaths at the Novelty Legion Hall. Everyone present knows their job for that day. She also gave information on the "who's who" of participants, and the preparations several have made to get ready for this big event in Novelty/Knox County. Look elsewhere on this blog for information about where to park that day for the ceremony.
It was brought up about having a "Christmas treats" day for coffee. After discussion it was proposed to decide at coffee this Tuesday about whether to do this or not--date would either be December 13 or December 20th.
This month's recipe was called "Do Nothing Cake" and was the birthday cake for the celebrants. Now this post person cannot say that it absolutely was "do nothing" to make, but it was pretty easy to put together!
INGREDIENTS:
2 cups of sugar.
2 cups of flour.
2 eggs.
1 tsp of baking
soda.
1 tsp of vanilla.
16 ounces of
undrained crushed pineapple.
You’ll Need (for the icing):
½ cup of butter.
1 cup of sugar.
¾ cup of evaporated
milk.
1 cup of coconut.
1 cup of nuts.
1 tsp of vanilla.
How to:
In a bowl, mix the
sugar, flour, eggs, baking soda, vanilla and pineapple until well blended using
a spoon.
In a 13×9 cake pan,
pour the batter and bake for 35 to 40 minutes in a preheated oven to 350°.
To make the icing,
mix together the butter, sugar and evaporated milk and cook for 5 minutes over
medium heat to thicken a little. (OK, I had to cook it a bit longer than that!)
Turn off the heat
and add in the coconut, nuts and vanilla then ice the cake while it’s still
hot.
